Agriculture: Certified Organic (Ecocert); use of organic fertilizers, biodiversity promotion, and microbiome enrichment 

Harvest: Syrah – September 7, Carignan – September 29, 2022

Vinification & Aging:

  • Carignan: 5-day maceration, 50% destemmed

  • Syrah: destemmed, 15-day maceration in concrete vats, not crushed

  • Indigenous yeasts

  • Aged 10 months in stainless steel vats

  • SO₂ levels well below biodynamic standards

Tasting Notes: Ruby-purple in color. Aromas of redcurrant, blackcurrant, morello cherry, and raspberry. Fresh, delicious, and mouthwatering on the palate.

Food Pairing: Roasted poultry, red meat, grilled vegetables, pasta with pesto, or small goat cheeses.
