Vinification:
Whole bunch pressed, settled without enzymes
Fermented in 500L French oak barrels & 5,100L foudre
20% new oak; 18% completed malolactic fermentation
Aged 11 months on lees before blending & bottling
Weather Conditions: Cool, dry harvest with delayed budding and flowering. Small but high-quality yields, carefully picked to ensure freshness.
Tasting Notes: Bright and crisp with aromas of quince, citrus peel, lime, and butterscotch caramel. Notes of pear drop lead into a lush, balanced palate with vibrant citrus, minerality, and a long textured finish.
