Vinification:

  • Night harvest at full maturity

  • Pneumatic pressing; free-run juice protected under inert gas

  • Cold settling (48 hrs at 8°C)

  • Temperature-controlled fermentation (15°C)

  • No malolactic fermentation

Producer: Les Costières de Pomérols (founded 1932, 2,100 hectares with 450 hectares Picpoul)

Tasting Notes: Bright and refreshing, with aromas of citrus blossom, minty herbs, and chalky minerality. Medium-bodied, clean, and vibrant — perfect with oysters and seafood.
